Veteran local chef Damian D’Silva embraces his Eurasian-Peranakan roots in Folklore, a restaurant that focuses on Singapore heritage cuisine. Expect a mix of Malay, Peranakan, Chinese, Indian and Eurasian flavours in its repertoire, which features dishes such as sambal buah keluak and Singgang — an Eurasian dish of deboned wolf herring.

Founded by Daniel Chavez, the chef-owner of Spanish eatery Ola Cocina Del Mar, Tono Cevicheria is a Peruvian restaurant offering the likes of causa (potato salad with lime and Aji Amarillo chilli), fish sashimi soaked in Tiger’s Milk (a citrusy marinade), and skewered meats. It also boasts four different types of ceviche, prepared using an assortment of fish and ingredients.

An outpost of Osaka’s one-Michelin-starred Rokukakutei, this Japanese restaurant is specialises in kushikatsu, which is essentially deep fried skewers of meat, seafood and vegetables. These are presented omakase-style, and may include options such as wagyu beef and green pea croquette.

Located in Telok Ayer, Gaig Restaurant Singapore is an outpost of the eponymous one-Michelin-starred restaurant in Barcelona. It offers a variety of Catalan specialties spanning tapas, paellas and stews, incorporated with ingredients that are either homemade or imported from Spain.

Here’s another spot to check out if you can’t get enough of Japanese kushikatsu, or deep fried skewers. Panko is the latest addition to Unlisted Collection’s stable of eateries, and serves the likes of fried unagi and zucchini. It also offers rice bowls for the lunchtime crowd.

The eatery held a pop-up stall at last year’s Epicurean Market, where it served its signature fried chicken and biscuits.

Located along East Coast Road, this casual eatery specialises in baking its own sourdough from scratch, using two wood-fired ovens. Pick from flavours such as fruit, rye, white and wholemeal.
