Known for being Ferrán Adrià's 'most outstanding disciple', Roncero specialises in avant-garde 'nouvelle cuisine' and is one of Spain's most influential chefs.
Now open for lunch and dinner, highlights from the two chef tasting dinner menus at VIEW 62 include the XXI century omelette, a martini glass filled with slow-cooked onion as a base and topped with a layer of creamy egg yolk sabayon, potato foam and olive oil and the Chilean sea bass with green bean sauce and Iberico air.
The chef tasting menus are priced at HK$1,400 for 14 courses and HK$1,800 for 16 courses per person, and consist of four stages: snacks, tapas, a main and dessert.
If you'd rather pass on Roncero's avant-garde cuisine, head up to VIEW 62 for a variety of creative cocktails or a surprisingly large selection of organic and herbal teas with a 360-degree view.
